COUSCOUS WITH CHICKEN ITALIAN SAUSAGE

Ingredients:

1 tsp. Olive Oil
1 small onion - chopped
2 cloves garlic - chopped
1 C mushrooms - sliced
1/2 C celery - diced
2 C chicken broth
1 C diced tomatoes
1/2 C diced red bell pepper
1 tsp. grated orange rind
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
1 C dried couscous
1 lb San Luis Chicken Italian Sausage - cooked & thinly sliced

Preparation:

Heat oil over medium-high heat in a large saucepan. Stir in onion & garlic and cook for 5 minutes. Add mushrooms & celery and cook 5 minutes more. Stir in remaining ingredients and bring to a boil. Cover pan and turn heat to low. Cook for 10 minutes. Remove cover and stir well before serving.
