MEDITERRANEAN FRITTATA

This delicious dish is great for breakfast, dinner or even as an appetizer. I have used lighter cheeses, such as Mozzarella and Parmesan to let the wonderful flavors of the sausage come through and to lower the overall calories of the completed dish.

Ingredients:

1/2 Red Bell Pepper
4 or 5 thin slices of onion
2 Tablespoons Olive Oil
1 Link San Luis Chicken Mediterranean Sausage, cooked and sliced thin
3 Eggs
Salt and Pepper to taste
2 Tablespoons Mozzarella
1 Tablespoon Parmesan
Fresh Basil, chopped (for garnish)

Preparation:

Roast red bell pepper, peel and cut into thin strips. Put 1 Tablespoon oil in a pan over medium heat and add onion. Sauté until onion is soft, about 10 minutes. Add bell pepper and sauté for 2 additional minutes. Lightly mix the eggs, adding salt and pepper to taste. Heat remaining tablespoon of oil in a 10" pan and pour in eggs. Cook eggs over med-low heat until bottom is set, approximately 5 minutes. Add bell pepper and onion mixture, then sausage on top of eggs. Top off with mozzarella and parmesan cheeses. Place pan under broiler until top is set and golden brown, about 2 minutes. Sprinkle with basil and serve.
